[Stop #1: Baltimore, Maryland] Raspberry Buttermilk Scones & Gingerbread-White Chocolate Blondies by Amanda Liew

The next month of my life is going to be filled with more travel, food, friends, and family than I can possibly imagine. While it will be impossible to blog while I'm abroad, I'll do my best to keep things in order. After having finally moved out of my house in Philadelphia, I zoomed off on a train for Stop #1 to visit my other best friend, Madeline, in her hometown of Baltimore, Maryland. Madeline has an amazing history with baking and food photography. She was one of the Photography Editors for Penn Appetit which is the first university food magazine in the entire country. Last summer we lived together in New York where she held the coolest internship with a food photographer, and I'm so excited that we're both returning there full-time in July! Despite my pleas to make macarons (it's too humid apparently - pshh), we chose the next best thing and baked BOTH Raspberry Buttermilk Scones AND Gingerbread-White Chocolate Blondies. Food heaven right here. I was also so excited to finally add a post to my "Food" section since I only have is How to Cook a Traditional English Roast from my time abroad. We used recipes from queen bee, Martha Stewart, and I've included them at the bottom of this post!

The scones were amazingly fluffy, and the egg glaze on top perfected it. They weren't too sweet and the fresh raspberries added a perfect kick.

The Gingerbread-White Chocolate Blondies, on the other hand, were decadent to the max. The brown sugar, butter, molasses, white chocolate chips, oh lordd they're delicious.

Martha Stewart's Blueberry-Buttermilk Scones (substituted with raspberries)

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cake flour, (not self-rising)
  • 3 tablespoons granulated sugar
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 4 ounces (1 stick) cold unsalted butter, cut into small pieces
  • 1 cup (1/2 pint) blueberries
  • 1/2 cup low-fat buttermilk
  • 1 large egg, plus 1 large egg lightly beaten for egg wash
  • 1/2 teaspoon pure vanilla extract
  • Fine sanding sugar, for sprinkling

Directions:

  1. Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
  2. Whisk together flours, granulated sugar, baking powder, and salt in a large bowl. Cut in butter with a pastry cutter, or rub in with your fingers, until mixture has the texture of coarse meal. Stir in blueberries.
  3. Whisk together buttermilk, 1 egg, and the vanilla. Drizzle over flour mixture, and stir lightly with a fork until dough comes together but a small amount of flour remains in bowl.
  4. Turn out dough onto a work surface, and gently knead dough once or twice just to incorporate flour. Pat dough into a 1-inch-thick round. Cut into 12 wedges. Transfer to prepared baking sheet. Brush with egg wash, and sprinkle with sanding sugar. Bake until golden brown and cooked through, about 22 minutes. Transfer scones to wire racks to cool.

Martha Stewart's Gingerbread-White Chocolate Blondies

Yield: Makes about 48 dozen 2-inch squares

Ingredients

  • Vegetable-oil cooking spray
  • 2 3/4 cups plus 1 tablespoon all-purpose flour
  • 1 1/4 teaspoons baking soda
  • 1 1/4 teaspoons salt
  • 1 1/4 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 1/2 sticks (20 tablespoons) unsalted butter, room temperature
  • 1 1/4 cups packed light-brown sugar
  • 1/2 cup plus 2 tablespoons granulated sugar
  • 2 large eggs, plus 1 large egg yolk
  • 1 1/4 teaspoons pure vanilla extract
  • 1/3 cup unsulfured molasses
  • 10 ounces white chocolate, coarsely chopped

Directions

  1. Preheat oven to 350 degrees. Coat a 17-by-12-inch rimmed baking sheet with cooking spray. Line bottom with parchment cut to fit, and coat parchment. Whisk together flour, baking soda, salt, and spices.
  2. Beat butter and brown and granulated sugars with a mixer on medium-high speed until pale and fluffy. Add eggs and yolk, 1 at a time, beating well after each addition and scraping down sides of bowl as needed. Beat in vanilla and molasses. Reduce speed to low. Gradually add flour mixture, and beat until just combined. Stir in white chocolate.
  3. Spread batter into prepared pan. Bake until edges are golden, about 25 minutes. Let cool completely in pan on a wire rack. Cut into 2-inch squares or desired shape.

Puerto Plata: Hilarious friends, sliding off waterfalls, and dancing until your body hurts by Amanda Liew

After two years of going home, and one year of doing Alternate Spring Break, I decided it was time to do a "real spring break" trip and go to the Dominican Republic with my friends! 40 of us Penn kids dominated the Puerto Plata all inclusive resort and spent 6 days relaxing, celebrating, and stuffing ourselves on a buffet 3 meals a day! It was my first time to the Caribbean, and wow was it amazing. It was the perfect combination of meeting new people, relaxing (ie sleeping on the beach and taking a nap each day), and being able to dance like a lunatic with some of the best people!

The lobby had some of the coolest light fixtures: _DSC0013 Chloe organized a City Tour for us, and it was one of the few opportunities I could use my DSLR on the trip! All the other times I was too afraid to get sand or water near it! We went to the Brugal Rum Factory! I couldn't take any photos inside the factory itself, but I snagged a bottle for my dad! On returning home, I found out shipping alcohol across state borders is a federal offense or something hahah. Sorry, Dad! Guess you're going to have to wait a few months: _DSC0022

Unfortunately, we din't really feel like we got to see the real city. Most of the places the tour guide took us was clearly set up just for tourists - all of the shops we went to were souveneirs which was kind of a bummer. One thing I did love, though, was how beautiful and bright all of the houses were painted. Houses in America are all beige and white - how boring!

Hilariously, some of the girls thought this was a "historic display" of what they used to transport people in...nope, we were riding it! We took a 10-15 minute ride all the way up Mount Isabel de Torres to see a full view of Puerto Plata.

One of the other days we went on a Jeep Tour which ended up being one of the best decisions of my life. Seriously, this was one of those cross-it-off-your-bucket-list moments. In Puerto Plata, there is Damajagua Cascades also known as the 27 Waterfalls. Essentially, it's possible to climb, jump, and slide down 27 waterfalls on this mountain. Doing all 27 takes almost all day and is pretty intense, so most groups just do 7 which was fine by me! Before we left for the trip, I decided to invest in a waterproof camera case for my Canon PowerShot. I got the DicaPac WP410, and it was perfect! It ended up being one of the best decisions on the trip because we were able to document our entire excursion. I was able to tie the camera to one hand while I swam and snap some phenomenal photos!

Here we are in our gear! We hiked for about 25 minutes following a river in our gear and tennis shoes. Little did we know our soggy socks were the least of our concern:

IMG_6015 At the first waterfall! Our route required us to walk UP the waterfalls first and then to slide/jump down them on our return route. We started off by diving into the extremely chilly pool, but had it easy with a ladder to help us out:

Climbing up this waterfall was definitely one of the most terrifying aspects. There was one guide at the bottom with his hands propped out for one foot & another guide at the top of the waterfall with one hand reaching out for your hand. The bottom guide would throw you forward as you took a step, and the top guide would yank you with all his force. All the while, a rushing waterfall is cascading into your face pushing you backwards hahah. We watched a few people go at first and it literally looked like they were getting tossed up a waterfall it was terrifying! We all made it through, though:

Now it was time to start jumping and sliding off the waterfalls! Here is where the waterproof camera case came in REALLY handy: I was able to record my trips down the waterfall and then capture everybody else after I popped back up! Apologies because the first few seconds are insanely shaky - I wasn't exactly concerned with getting the perfect recording when I was about to make a 10 foot drop in rushing water!!

Of course, those two excursions only took up a few of the days of our entire trip! The rest of the time was spent enjoying the beach, lounging, napping, eating, napping more, eating more, and going to some clubs!IMG_5908

Overall, it was a trip I'll never forget, and just what I needed after finishing my 90+ paged thesis (more on that later!). Thank you to all the amazing people who initiated this trip, planned the lengthy traveling back and forth, figured out our excursions, and just made this a hilariously fun vacation!

[Blip] We're going to SEA! by Amanda Liew

Well, yes, we’ll be traveling over lots of ocean I’m sure…but we officially booked our flights to South East Asia! 3 weeks of Thailand, Cambodia, Vietnam, and my dad’s homeland of Malaysia!!! Seriously can’t wait. This is the last hurrah, folks.

Foodie Runs in the Family by Amanda Liew

This weekend I had the amazing opportunity to have a reunion with of my amazing cousins! A little back story, here, but my dad has 10 sisters and 1 brother!! Because my dad was the baby of the family, a lot of my cousins are much older than my brother & me. ! 1/3 are in America, 1/3 are in Malaysia (where they were all born), and 1/3 are in Australia so I didn’t really grow up with that many relatives around, sadly. When I went to London to study abroad, though, I realized that my cousin Christine had moved from Australia to London and was working there! It was seriously awesome reconnecting after so many years, and I got to meet her then fiancee and now husband! I am proud to say that I was the one who introduced them to Modern Family hahah. This past summer, Christine came to New York to pick up her wedding dress (yep, you read that right! she’s that cool!), and I got to meet ANOTHER cousin, Benita from Rochester, NY! 

In December, Christine reached out to us again to let us know that her new and awesome company CHOBANI (#doesthismeanigetfreechobani) was sending her to NYC for a business trip! So we whipped up some plans where we could meet her. I have to say, this was one of the most fun weekends I had experienced in a long time. It was shopping and eating and shopping and eating - what more could you ask for? I also got a chance to work on my photography assignment and took a lot of small depth of field photos (a post on that later).

The first night we went to Ippudo (secret trick: the wait time is usually 1 hour, but if you wait there instead of leave and come back, they’ll come take your name again and bump you up the list!) We got some of the most amazing Akamura Modern ramen I’ve ever tasted (the broth was heavenly), and my favorite, the Hirata Buns with Pork Belly

After some endless SOHO shopping on Saturday (helloo Aritzia!), we met up with Benita who had rushed to the Michael Kors store right after her flight landed hahah. We finally got to check out the epically awesome Chobani SOHO cafe and got some delicious Chobani samples thanks to our corporate friends (wink wink). My Strategic Brand Management Team is actually choosing Chobani as our project brand so I made sure to take down lots of notes and snap a gazillion pictures! 
Below we have Pomegranate + Chia Seeds, Salmon + Olive Oil (surprisingly good! I was very hesitant about this one), Fig + Walnut (my favorite), and Pineapple + Toasted Coconut. Simply brilliant. image

The coolest part is that each Chobani dish comes in its own glass bowl which you get to keep! I’m eating my yogurt out of here every time from now on…

Since Christine and I hadn’t taken a peek at Michael Kors yet, we thought we’d take a gander. Little did Christine know that Benita and I would quickly convince her to buy the most gorgeous navy maxidress for her brother’s upcoming wedding! How gorgeous does she look?! I wanted her to get the shoes too, but they were a little bit more sensible…

We finally headed off to our lovely hotel where we randomly got complimentary rice krispy treats hahah and enjoyed some Laduree macarons (I insisted we make the trek!).

Later that night we had THE most phenomenal dinner at Balthazar where we somehow managed to finish off the largest raw seafood platter on the menu, and then still had room for dessert (again, at my insistence!). I discovered my second favorite dessert (#1 being macarons): pavlova! It’s a meringue that is crisp and fluffy on the outside and chewy on the inside…then doused with fruit. Sigh. It was heavenly. I wish the picture quality was better to show how decadent it truly was!

We also somehow managed to get complimentary champagne and put on Balthazar’s A-List! My cousins live like celebrities, I’m telling you…

Not to be beaten by the day before, Sunday we woke up at the crack of dawn *cough* 9am *cough* and went to Eataly to beat the rush! As much as I love the marketplace and the gelato, I have to admit that I was a little bit disappointed by the restaurant section, La Pasta. I think we were all a little underwhelmed by the flavors and expected a lot more considering how long the line usually is! Nevertheless, family and ambiance make up most of your enjoyment so we had a great time anyway.

All in all, it was a glorious weekend. I am so happy and fortunate to have such amazing relatives who love me enough (despite only recently getting to know me) to put in the effort for a reunion. Christine and Benita are such beautiful, hilarious, fun, and generous people. I couldn’t be more lucky to be related to them!
